The Paddington Inn Dining is a brand new buzzing restaurant at the back of the hotel, equally suited to intimate evening dinners as it is to long, lazy lunches with friends. It’s an open space with a sun-lit kitchen with the Chefs on show, and a feature wall of portraits by artist Christiane Spangsberg.

Head Chef Justin Schott heads up the kitchen team and has created a cutting edge menu that's all about great produce from the season, cooked well. It’s as simple as that. Highlights include an heirloom tomato salad with watermelon and pine nuts, marinated Ora salmon with blood plum, ginger, sake and shiso and an 850g Rangers Valley rib eye made to share. Pair with an interesting wine from our extensive list, and stay on til late with delicious cocktails made by our expert bartenders.

Justin Schott has had a passion for food from a young age. Growing up in London, Justin was always distinctly intrigued by ingredients and how they worked together, choosing to leave a university degree to study to become a chef.
